Irish style cassoulet



500g Irish rashers
8 good Irish sausages
65g of duck fat
1 head of garlic - peeled and sliced
1 large onion - chopped
1 Kg of haricots beans soaked overnight
2 bay leaves
2 sprigs of thyme

Serves 8

The very french dish, cassoulet, is normally made with Toulouse sausage but we don't see any reason good quality irish sausages shouldn't be used. This is definitely a winter dish. If you like stews and beans you will love cassoulet.
