We have always had a family recipe for our black and white puddings, which were fully based on pork. However, when developing our range, we experimented with the recipe for the black pudding and found that you could not beat the flavour if there was mixture of both pork and beef blood. So, we broke with tradition and refreshed the family recipe!
Our puddings have a mixture of oatmeal and barley that give a medium coarse texture. Our seasoning is mild as we prefer to taste the background elements of the pudding and not have them too spicy. This seems to satisfy all the family as well as our loyal customers.
The exciting thing about puddings is their versatility in cooking and can be used as part of a traditional fry up, in salads, on pizza, in sandwiches or served with scallops or other seafood.
